I've done this with other cited meats and it came out ok. Guanciale is done already but since I'm in Europe, I can't taste it yet. Let's see when I get back how it tastesMiguelhttps://www.blogger.com/profile/13632153273008289684noreply@blogger.comtag:blogger.com,1999:blog-1148472584851554860.post-85522026916904382752011-06-30T19:50:19.766-07:002011-06-30T19:50:19.766-07:00Hi miguel, I'm curious to know how you are fai...Hi miguel, I'm curious to know how you are fairing with the homemade guanciale. I wanted to make my own a couple of years back but I was afraid to air dry here with our high temperatures and humidity making bacterial infection more probable. What did you do to address this?
I would love to try making it too!
Thanks!Pixienoreply@blogger.comtag:blogger.com,1999:blog-1148472584851554860.post-29828922766542397182011-06-20T03:41:50.278-07:002011-06-20T03:41:50.278-07:00Hi Juanjo,

I don't think they have Guanciale here but you can try it with pancetta.

Cheers!Miguelhttps://www.blogger.com/profile/13632153273008289684noreply@blogger.comtag:blogger.com,1999:blog-1148472584851554860.post-28563518770937525242011-06-19T21:22:20.338-07:002011-06-19T21:22:20.338-07:00Hi Miguel,
